this is a post i've been wanting to write for a while- but was having a hard time figuring out what to say. over the course of the last month, our life has been a tumultuous roller coaster, filled with the highest highs and the lowest lows. and as of right now, there's no end in sight. however, despite the uncertainty, a. & i are determined to figure out how to hang on and do our best to enjoy the ride.
when we first found out we were moving to california, we were under the impression we'd be living in san diego. having family and close friends there, made this an exciting change. about a week before our move, a. received news of a job opening in orange county and everything changed. we began a new apartment search & job hunt about an hour and a half north. we shared the news excitedly with family and friends and last week, just as we were ready to put down a deposit, were surprised to learn this position was no longer available until mid-summer.
with both of us currently unemployed, waiting until the position opened up this summer was not an option. so our orange county plans were put on hold and after thinking it through, we decided once and for all that we needed to focus all our efforts in san diego. so we did, and so we continue.
december 7th was a.'s last day as an active duty service member. we knew this day was coming and for over a year & a half, have planned our lives accordingly. we made plans to move to san diego so we could live near family, actively saved so we'd have a cushion should we both be unemployed (and here we are!), made arrangements to live with family until we could find somewhere promising and promised one another that we'd do our best to stay sane despite all the inevitable changes. as much as we planned and took the steps we thought necessary, we didn't realize just how flexible we'd have to be.
don't get me wrong, most things here are very good. we love being so close to our families and old friends. but it's different...obviously. our life in syracuse was so simple. so easy. we didn't answer to anyone (well, except of course, when it came to work), lived how we wanted, ate how we wanted, spent our evenings & weekends doing whatever we wanted and lived spontaneously, without worry. looking back, it was like a dream. now we're adapting to new tastes and habits, new conversations & expectations, new opinions and plenty of differences. we're adjusting to the job hunt and having to ask for help, learning to rely on our san diego network and re-establishing ourselves in this community. currently, so much is new. much of which is good and wonderful & much of which we can't wait to change. but, we're learning how to be flexible.
i've found over the course of blogging, there's a fine line between talking about a problem & complaining about a problem, the latter of which i'm trying to avoid. a. & i are taking the steps necessary to change our current situation and are doing our best to embrace everything we've been given. some days it's easy...some days it's not. we understand 2013 is going to begin with lots of changes. and we're okay with that. but despite all the change and chaos and confusion that is our life right now- we're loving that we get to spend another christmas with one another and have the opportunity to forge a new path together.
so for now, i'm practicing my deep breathing and learning the art of flexibility. being able to roll with the punches is critical for me- and there are days when it takes a force as strong as a mac truck to remind me of this. when i catch myself bumming because we don't have a tree to decorate, a job to wake up to, a kitchen to cook in, a house to blast my obnoxious christmas carols- i remember this change is temporary. and it's going to lead to wonderful things. 2013 is going to bring lots and lots of change, so right now- its up to me to embrace and adapt...because ready or not, it's coming anyway.

around here.
around here things have been rather quiet. there's a lot of knitting & homeland watching (have you see this show? holy. crap. it's definitely one of our faves.) and holiday treat baking. i finished making and ordered our christmas cards and picked up some brightly colored envelopes for an added pop of holiday cheer. i'll be so happy to have holiday cards crossed off my to do list.
speaking of to do lists, i still have a thousand projects lined up before christmas, but i'm enjoying every single one. i love having projects to keep me busy...not that busy is needed this time of year. so to slow down a bit, we're feeding the ducks and relearning settlers of catan- a fantastically addicting game.

mile a day.
as mentioned in this post, i've committed to the mile a day december challenge. occasionally i'll post photos on instagram using the hashtag #mileaday, but more consistently, i'll be sharing my progress on a weekly basis right here.
i was hoping to start this challenge on december 1st, since i was already behind the eight ball. however that lovely stomach virus that's been going around had other ideas. so officially, i began december 2nd and will continue to move a mile a day until january 2nd.
i'll be the first to admit, this is hard. and i'm only on day 5 and i'm counting any mile regardless if i run, walk, swim or bike. but i'm also determined to finish and hopefully enjoy the process. i will tell you one thing, getting out and moving has been so good for me. lately i've been a giant stress-ball- and a big, 'ol grumpy one at that. so for the sake of myself and everyone else around me, i'm embracing this #mileaday.
sunday// swim 1450 meters, walk .5 miles (1.25 miles total)
monday// run 4 miles
tuesday// run 1.54 miles
wednesday// walk 1.1 miles

bake 20: one crust, two ways.
originally, i had every intention of making only one pizza. but the dough was so easy and fast that i just couldn't help myself. truth be told, i'm a sucker for pizza- anytime of the day. hence, why i'm now sharing a more traditional dinner pizza & a less traditional breakfast pizza. enjoy!
recipes: wild mushroom pizza with truffle oil & my go-to breakfast pizza*
adjustments: for the wild mushroom, we did everything per the directions with the exception of replacing the cremini mushrooms with button mushrooms since that's all our local grocer had available. for the breakfast pizza, i used the dough recipe from the mushroom pizza and added some crushed garlic, fresh minced basil & thyme to the dough before letting it rise. the dough was awesomely flavorful.
reviews: make this mushroom pizza and i guarantee you'll be making it again and again and again. we used a pampered chef pizza stone, and why a. and i haven't had one of these in our kitchen repertoire is beyond me. it made the crust crunchy & worlds better than your average oven baked pizza crust. as for the breakfast pizza- i'm a fan of any opportunity to clean the fridge. i love how easy it is to make this pizza and believe it or not, it tends to be an impressive breakfast entree should you have quests in town. we don't make breakfast pizza often, but when we do, it's always a huge hit.
*for the breakfast pizza: assemble the dough per directions and while it's baking, sauté diced onions and pepper in olive oil. scramble 4-6 eggs and once cooked, add tomatoes, black beans, cilantro, avocado, etc. season with salt and pepper. once crust is 90% cooked, pour egg mixture onto crust, top with cheese and put back in oven. bake until cheese melts. cool for 10 minutes and serve.
this was #14 & #15 of the bake 20 challenge...almost there!

december goals.
this december, i'm giving myself free rein to have very few goals. over the course of the next 30 days, i'm planning to finish the bake 20 challenge and while a bit late, i'm joining the #mileaday challenge.
otherwise, the goal is to enjoy the holidays: decorate, craft, cook & bake, attend holiday parties and community festivities, drink warm apple cider while walking the lighted streets and spiked eggnog in front of the christmas tree with a few of my faves. too few years have we been able to just enjoy this awesome time without the stress of traveling and fair family planning. so this year, we're just soaking it in.
