buffalo tofu wrap.

i have a quick & yummy recipe to share with you for the weekend.  even though summer is officially over, it's definitely not too late for picnics in the park and these buffalo tofu wraps are the perfect go-to.
i'm a sucker for buffalo sauce.  when we first moved to syracuse & i discovered buffalo chicken, i ate it all the time.  seriously, like a kid who only orders chicken tenders, if i restaurant had it, i ordered it.

now as a vegetarian, there are times i crave buffalo chicken.  it's one of the few foods i miss, friends.  enter the buffalo tofu wrap.  it's delicious & hits the spot every.single.time.  i hope you enjoy this recipe as much as i do!

ingredients
1 package firm tofu cut into thick slices
1 cup buffalo sauce*
1 cup spinach
1/2 cup tomatoes, sliced
1 scallion, chopped
blue cheese yogurt dressing
4 flavored wraps (i used sun dried tomato)

directions
marinade the tofu in buffalo sauce for about 30 minutes.  once marinaded, bake tofu for 15 minutes at 300 degrees.  while tofu is baking, put a bit of spinach, few tomato slices, scallions and a drizzle of blue cheese dressing on each wrap.  pull tofu from the oven, slice again into smaller pieces (about half inch thick) and put about 3-4 slices per wrap.  drizzle the inside of each wrap with additional buffalo sauce for extra spice if preferred.  roll wraps, cut in half and serve, warm or cold.

*i LOVE this buffalo sauce from wegmans, our local grocer.  so much so, that i'll be ordering it online just to have some in our house from time to time.
Note: The plate and flatware are both from crate & barrel from eight years ago and i think the dish towel is from target.
